When you are chronically ill, you often have to see multiple doctors and everyone has a different variation of what you should be eating. It can make your head spin. Today I am going to share with you the diet and doctor that not only turned my health around but helped me heal from 90% of my symptoms once I came off of antibiotics.
When I started off my treatment for Lyme and co-infections, I was advised to eat a plant based diet. I ate fresh salads, chicken, fish, low sugar fruits and experimented with juicing. As I continued on this path of intensive antibiotics and eating a plant based diet I started to feel worse. I felt weak, light-headed, nauseous and was losing A LOT of weight. The antibiotics attributed to a lot of my symptoms but I later learned that the diet I followed was also not right FOR ME.
Fast forward 1.5 years into antibiotics and I hit a point where I couldn’t digest anything except for smoothies with vegan protein powder. Even those didn’t always sit well. At the time, I weighed 94 lbs. at 5’7 and my yoga pants were baggy on me. It felt better not to eat then to attempt to digest food. Basically, I was starving. This was about the time I hit rock bottom. In addition to the digestive issues, I was anxious, moody, irritated and knew that something needed to change. I knew about the gut/brain connection and thought if I could somehow eat the right foods and fix my stomach, everything would get better.
Finally, a friend of a friend referred me to a doctor she thought could help me. I was desperate and willing to explore any new options presented. She sent me to Dr. Dulin, a holistic doctor who specializes in biochemical nutrition. I like to describe him as someone who can read between the lines.
Every other doctor I saw reported that all my blood work was normal, even though I felt like I was on my last leg. Dr. Dulin took one look at my blood work and said my body was in shambles. The good news was he thought he could help but it was going to take time. While I’ve heard this time and time again, his explanations on why things were happening made me believe in what he was saying.
Dr. Dulin put together a meal plan and nutritional program specifically for MY BODY and no one else. The meal plan he presented was the complete opposite of every diet I was told to follow the last few years. He wanted me to eat meat and fruit, two food groups I was told to stay away from for so long. And he wanted me to stay away from raw vegetables except for some lettuce to keep me “regular.”
This anti-inflammatory/anti-histimine food and supplement plan has evolved over the years but this is the first iteration. I started this plan when I was at my absolute worst and couldn’t digest anything. Shortly after I started this diet, I went completely holistic and stopped all of my antibiotics.
- Vitamin C
- Vitamin D3
- L’ glutamine
Meat (3-5 oz. portions – slow cook all meat)
- Beef – 5x per week
- Turkey – 5x per week
- Pork – 4x per week
Fruit (3x day – puree, blended or cooked)
- Casaba melon
- Crenshaw melon
- Honey Dew
- Star fruit
Vegetables (2 cups per day, make all vegetables mash potato soft)
- Bean Sprouts
- Lettuce (Boston, Iceberg, Chicory, Romaine)
- String beans
- Sweet potato
- 100% Buckwheat soba noodles (24 oz. per week)
- Smoothie with hemp milk and 2 tablespoons of cashew butter
Nuts & Seeds
- Cashews and Walnuts (8 oz of each per week)
- 8 oz. of water a day
- herbal and decaf teas/coffee
At first I was skeptical on whether I would be able to get the food down but to my surprise I had no issues digesting slow cooked foods. I bought a crock-pot for the meat and vegetables. On the stove-top, I would stew apples and berries. I was even able to eat the buckwheat noodles. It was amazing I was finally able to eat again!
Within one week on this diet I started to feel a little better. I began putting muscle back on and felt less irritated and moody. After 5-6 months, I was able to incorporate food cooked normally and my symptoms began to lessen in intensity and become less frequent overtime.
It took 1.5-2 years to eliminate all of my symptoms but eventually they did all disappear. The only thing I have left is some food sensitivity but I haven’t felt sick in years.
This is a long post so I’m going to wrap it up now but I wanted to share the diet and doctor that helped me heal because there is so much unnecessary health suffering going on. I believe a lot of it can be fixed with food and vitamins. It may take time but it’s possible.
